ReplyDeleteThere were many things I didn't know about "hunting" and I learned a lot.
I have also eaten the deer and wild boar that were mentioned in this presentation (but I have never eaten bear), and both were delicious.
I have a question that has nothing to do with the content of the class, food, but is it illegal to trap animals for damage control purposes outside of the hunting piriod?
Besides deer and boar, what other animals can be hunted and eaten?

DeleteYou have eaten both deer and wild boar! Wild boar with fat is really tasty.
Even outside the hunting season, you are allowed to capture them to prevent damage to your own fields and other areas. Of course, you need to follow the legal procedures.
There are 48 species of animals that are permitted to be captured and eaten, including foxes, raccoondogs, badgers, pheasants and ducks. Some of these animals are deliciously inedible (raccoondogs are really bad!). Maybe, they are permitted as a remnant of the time when fur was used.

There are many conditions for obtaining a hunting licence, but the big one is probably age. You can get a trapping licence from the age of 18 and a gun licence from the age of 20. Also, you have to be in good physical and mental health, including not being an alcoholic or a drug addict. The test itself is easy and you are unlikely to fail.

I sometimes take the heads home for people who want skulls.
I was concerned about the presence of parasites. How are we handled? Or is there no need to worry about it since it will be heated up?

DeleteThere are many types of parasites. In the case of deer, there is almost certainly a parasite called '槍型吸虫’(Dicrocoelium chinensis) in the blood vessels of the liver (I have never had it). Although we do wash them off thoroughly, heating them thoroughly to the centre of the meat can prevent infection.
I saw the deer as a tourist animal and was looking forward to your slide. I learned that there is hunting as a hobby and hunting for animal damage control. Do you ever receive hunting requests? Can you find if a deer is a buck or a doe from a distance as you aim a gun? Are birds and other animals not target to hunting?

During the season when hunting is permitted, male deer have antlers. The body colour is also darker in males. So it is possible to distinguish between male and female deer even at a distance of several hundred metres.
Of course, birds are also a target for hunting: 22 species are designated. I have never targeted them, but crows and sparrows are said to be tasty. Ducks are said to be the most tasty.
Are deer in Nara Park wild animals? Deer in Nara Park are fed deer crackers, but does this affect their taste?

DeleteDeer in Nara Park are designated as a national protected species. By definition, they are wild animals, but their distance from human life is different from the deer I catch.
I wonder what they taste like. Deer crackers are mixed with newspaper and other ingredients, and I have not heard good topics about the health of deer.

If I freeze raw meat as it is, it loses its flavour.
The other day, after boiling it in water once in a pressure cooker, I froze it together with the cooking liquid and it was surprisingly OK; I think it will keep for about a year.
