Hello and good morning..
I saw a lot of posts from friends about noodles. Indeed, in this cold weather, eating noodles with warm soup is the best option.
Today I was also motivated to bring chicken noodles (Mie ayam), which are commonly served as street food in Indonesia.
This dish, like other noodles, is created with wet noodles or yellow wheat boiled in water until soft, then combined in a bowl with cooking oil and garlic.
The oil will coat the noodles and help them separate.
Chicken fat or vegetable oil can be used as the oil.
The spicy chicken and mushroom mixture is served over noodles and garnished with chopped scallions (shallots).
Chicken flesh is occasionally fried with mushrooms for chicken noodles. Tong cay (salted preserved vegetables), fried garlic (fried shallots), scallions (leek), fried wonton skin, pickled cucumber, cayenne pepper, chili sauce, and tomato sauce are some additional spices for chicken noodles.
Chicken noodles are available in two varieties: ordinary salty or savory noodles and sweet noodles. The sweet variety is also known as mi yamin. Sweet soy sauce will be added to sweet noodles, causing them to seem slightly brown.
When I was in Japan, I also attempted to make chicken noodles multiple times; here is the documentation.
I really enjoy any noodle, I am a noodle fans, including ramen, pho, soba, udon, and so on. Below are several noodles that I have tasted and captured.

Your food pictures look delicious.
ReplyDeleteI hear Mie ayam is one of dish which is influenced by Chinese cooking.
Thank you Ohmoto, Yes, it's true that chicken noodles are originally from China, but they've modified in flavor and appearance to appeal to the majority of Indonesians :)
Delete"in this cold weather, eating noodles with warm soup is the best option." We Japanese think that way, but is it so in Indonesian? Or is it what you found after you stayed in Japan?
ReplyDeletei thought similar to Sensei, in Indonesia we usually eat warm foods with soup, including noodles, during the rainy season.
DeleteThere is a special noodles for warming your body in winter: miso-nikomi udon. It is often offered in Aichi cultural area so you may find in Shizuoka. As I am not much familiar with the udon so I would ask someone to explain it.
ReplyDeleteThank you sensei for your recommendation, i will try :)
